Recipe- Lemon Drizzle Cupcakes

The other weekend I fancied a sweet treat, so I decided I would have a go at baking. My past baking experiences go as far as brownies, so I thought I would be a bit more adventurous and try some lemon drizzle cupcakes. As they turned out pretty good (even if I do say so myself) I thought I would share the recipe with you all.
Ingredients
175g butter
175g golden caster sugar
175g self-raising flour
1 tsp baking powder
3 eggs
3 tbsp lemon curd
Topping
100g granulated sugar
Juice and rind of 1 lemon
Method
Preheat the oven to 180°C and line a cupcake tin with 12 cupcake cases. Melt the butter and then add to a mixing bowl along with the caster sugar, eggs and baking power and sift in the flour. Mix all the ingredients together with an electric mixer until smooth, and then fold in the lemon curd. Evenly spoon the mixture into the cupcake tin and pop into the oven for 20 minutes or until golden on top.
Whilst they are baking you can make the drizzle, mix the rind, lemon juice and sugar together. Once the cupcakes are baked, let them cool for 2 minutes, then drizzle the juice on top. Wait until the drizzle has soaked in, and then tuck in!
Perfect to enjoy with hot water and lemon.
